Pepperjack Bread: seriously, this stuff is so good

Oh, cheese, how I love you. I also love bread.  Combining the two together is never, ever going to be a bad idea.  This here is not just bread, not just cheese bread, but bread with spicy cheese inside it.  It's bread that's good enough to eat just by itself, rather than as a vehicle for a spread or a sandwich - which is truly the test of good bread, by the way.  If you can't eat a particular bread by itself, there's something the matter with it - either it's boring or bland or too dry or maybe even stale.  Not that I don't also love accessorizing my bread, far from it, but if it's not palatable otherwise, your bread needs to step up its game.


You'll see there's a big hole in the bread.  This isn't a demonstration of the crumb of the bread - actually it has a nice firm crumb - but the cheese is added in chunks, so those chunks melt and leave little cheese caverns.  And can you imagine how good it smells?

Some people are afraid of baking yeasted breads or think it's a huge production.  This is a good one to start with since it only has to rise once.  The thing about worrying about baking with yeast is that there really isn't anything you can do about it.  If it fails, it's probably not because you did it wrong.  Yeast goes bad sometimes and then your bread doesn't rise, or maybe there were temperature or climate issues which yeah, you could correct for those, but I'm not going to tell you to pay a higher heating bill because your kitchen wasn't warm enough.  If your bread doesn't rise (or doesn't rise enough), eat it like a focaccia bread.  It'll still taste good.
