Making Late Night Snacks: Frozen Waffle Breakfast Dessert

As I had my face buried in my laptop, my eyes stopped at Bay State Rock Carmelita's post on the Facebook newsfeed. Her mention of blueberry pancakes made me fantasize myself in a diner. At one point, this thought went to IHOP.

Oh, IHOP, how I cannot drink coffee anymore because of you and your bottomless pots for $2. No teenager should consume that amount of coffee.

Anyways, I needed to satisfy my increasing desire for this breakfast plate. What was a girl to do? Then the light bulb clicked on. Although I couldn't have blueberry pancakes at the moment, I did have the ingredients to replicate IHOP's Belgium Waffle - Frozen Waffles, Banana Slices, Strawberry Sauce, Maple Syrup, and Whipped Cream. Not the best in the world, but definitely satisfying for the middle of the night snack.

Ingredients
  • Frozen Waffles (cook according to directions)
  • Banana - sliced
  • Strawberry Sauce
  • Maple Syrup
  • Whipped Cream
Layer all ingredients in the order they appear. Substitute or delete any ingredients as you feel fit. Boom.

IHOP, you hop, we all hop for IHOP is a line that will forever be in my head from my glory days of binge coffee drinking. Breakfast, anyone?

It's National Peanut Butter & Jelly Day!

In case you were unaware, April 2nd is National Peanut Butter & Jelly Day. Rumor has it this sandwich was invented by the soldiers during the war between the years of 1941 to 1945. The soldiers wanted to make the peanut butter a little more palatable; they combined the two items creating a sandwich that will forever be a staple in many households.

Traditional PB & J Sandwich
- 2 Slices of Bread (your choice of style)
- Peanut Butter (your choice of style)
- Jelly (your choice of style)
Spread the peanut butter on one slice of bread and spread the jelly on the other slice. Slap together. Boom. 

There is a variety of things you can do to make it a little more interesting.

- Toast the bread
- Use waffles or french toast instead of bread slices, top with maple syrup
- Use tortilla shells or pancakes
- Use pound cake and whipped cream 
- Add some jalapeno slices
- Add banana, apple, or pear slices
- Add some marshmallow or hazelnut spread
- Add some shredded coconut or dried fruit, like raisins
- Add some potato chips 
- Instead of jelly, mash up fresh berries and add some honey 
- Grill it like a grilled cheese
