Am I baiting you? First, delicious balls. Now, these Cheesy Bacon Pops. Do I know what you like, or what? Let's take a look at these nummy little nuggets. We've got a creamy filling, made so by cream cheese, which has "cream" right in the name, with some parmesan in it as well for a little sharpness, some bacon because obviously, some onions sauteed in the bacon grease because ALSO obviously, and then some parsley to green things up a little bit. And it's all wrapped in pastry.
If you ever have a recipe that has you fry up some bacon, and then it has you cook something else in some other fat, throw that instruction out the window immediately and saute your other ingredient in the bacon fat. To do otherwise is unethical. Onions, yes, but also garlic is a genius idea, and mushrooms, well, have you met those people who don't like mushrooms? This might help them.
This doesn't have any mushrooms in it - I don't think they'd be a right fit texturally - but it's still marvellous. Bring it to a party, like we tried to do, or just eat it all yourself, like we actually did... click the link to the post for the whole sad story about that.
I know it's a bit late to make these for this weekend's round of barbeques, but do a practice batch just for yourself, I won't tell - and then you'll be ready to impress everyone at the next barbeques all summer long. Cheesy Bacon Pops!
