Lunch all week - Mexican Couscous

Do you do this? Are you one of those sensible people that makes a big thing of food on the weekend and then takes it to work to eat for lunch all week long, thereby saving you money (if you usually go out to eat) or time (if you usually make your lunch in the morning at home)? I don't; I'll take a container of leftovers sometimes, but that's rare - my husband is more the leftovers-for-lunch guy, whereas I'm the leftovers-eaten-cold-out-of-the-container-after-the-gym guy (I eat everything cold out of the fridge - most things are pretty good that way!). But this time I did it. I had a weekend evening where I was cooking for only myself, so I made something I knew he wouldn't be interested in, since it had bell peppers and avocado in it and he doesn't care for either of those things. And since it called for a can of black beans and I didn't want to use half a can, I just made the full recipe even though it was way too much. Et voila! Lunch all week.



Dudes. This is GOOD. It's also full of vegetables and fibre and protein and all sorts of other stuff to keep your various parts operating properly, so if you're looking for nutrition, you've got it here. And if you don't throw a handful of grated cheese on top, which let me make it clear, I WOULD NOT JUDGE if you did, it's vegan too! It may well even be gluten-free. So the only people who can't eat this are people whose bodies or taste buds don't tolerate something in here, at random - all the usual suspects are cleared to eat it!

In order to eat it, you've got to make it. Fortunately this is, and not to name-check my blog, but this really is easier than falling off a log. You chop some veggies and you make some couscous, which, in case you didn't already know, means boiling some water (or in this case stock, for extra bonus flavour), putting the couscous in, and turning the heat off and thinking about kittens for a few minutes while it "cooks." Then you mix everything together and you're ready for action. The eating kind of action. I mean, maybe other kinds. I don't know your life. This is getting away from me fast - here's the recipe! Now go forth and lunch responsibly!
