Simple Kitchen with Krishna: Chocolate Chip Pancakes

Who loves pancakes? Who loves chocolate chips? Put them together what do you get? A breakfast to die for!

 

This is my own recipe and it started with a basic pancake recipe then evolved into delicious Chocolate Chip Pancakes. The best things about this recipe? You control how much chocolate chips you want in it! Cooking for one? No problem! You can save the batter for the next morning.


Chocolate Chip Pancakes

Ingredients: (Serves 1-2)

1 cup AP (all purpose) Flour
Mini Chocolate Chips
1 Egg, separated
½ cup Milk
Unsalted Butter
1tbsp Vegetable Oil
1tsp Baking Powder
1tsp Salt

Using a whisk, beat egg yolk in a bowl then mix in the milk and vegetable oil. Then slowly add the flour, salt and baking powder. Once mixed, set aside.

(Optional)
Using an electric hand mixer whip the egg white. Fold it to the batter. Make sure it is evenly folded.

Melt butter on medium heat using a non-stick pan. Pour batter (any size you want is totally fine) then quickly
sprinkle the mini chocolate chips. Let cook for 1-2 minutes then flip the pancake and cook for another minute. Do the same for the rest.

Note: Saving the batter for the next morning is a good idea but since it has whipped egg white in it, the shelf life is not as long. What you can do is separate the batter you want to save before folding in the whipped egg white. That way, the batter will last for 3 days (at most).
