I don't mean that cupcakes solve everything in terms of fixing your problems in your life, although that is probably true too. I mean that cupcakes are an easy way of fixing, specifically, your cake problems. Don't lie - we've all had our share of cake problems in our lives, although I'm not really talking about the problem of being unable to stop eating cake. I mean, that's not so much a problem, know what I'm saying?
No, what I am talking about here is cakes that don't come out right. Fortunately, in this case, the cake was fully baked and tasted fine - but it literally wouldn't come out right, and I mean come out of the fancy bundt pan I was using! It was really reluctant to come out at all, and when it did, it was coming apart. Cinnamon Cake no longer - it was a Cinnamon Hot Mess. So I did what anyone with a busted (but still very edible) cake would do: I broke it into cupcake-sized chunks and put them into cupcake liners, et voila: Cinnamon Cupcakes!
Now, let me go on record as saying that while these may look like they still are a Cinnamon Hot Mess, they taste awesome. They are really cinnamony without becoming spicy (which, if that's what you are looking for, I'm sure you could make it happen with a pinch of cayenne along with the cinnamon... for a Mexican-chocolate flavour), and really nice and moist, and the chocolate glaze pairs perfectly.
I think you could make these as cupcakes in the first place, although you'd probably want to adjust the baking time way down - say to like 25 minutes? - but I really hope someone can make them come out as the glorious bundt cake they were meant to be. Just grease and flour your pan really well. So? Are you feeling brave (and/or lucky)? Yes? Good. Give it a try! See if you can make these Cinnamon Cupcakes as a bundt cake!
