Chicken Escarole Soup from Sabella's Ravioli in Revere, MA |
Ingredients:
- 1 Can of Stewed Tomatoes (Italian Style recommended)
- 1 Can of Chicken Broth
- 1 Cooked Chicken Breast, Chopped
- 2 Cups of Escarole, Coursely Chopped
Method:
Add stewed tomatoes and broth to saucepan; bring to a boil.
Once the liquid is boiling, lower heat and add chicken and escarole.
Cook about five minutes. Serve.
This soup is a great base for getting creative. Add some cooked carrots, potatoes, pasta, or rice. Throw in some freshly squeezed lemon juice or jalapeno slices for a kick.
