Trader Joe's is a Trip - Chicken Salad Wraps

I have to admit out loud I am a Trader Joe's Junkie. Nowhere is better than a store you can walk into and feel like you're being whisked away to Disney Land. You all have your favorite place and this is mine. The moment the doors open cheerful colors, aromatic floral bouquets and food sample station excite the senses and you're off into a world of food for the health conscious and frugal.

Trader Joe's in Peabody is my TJ's of convenience and it's kind of awesome because they sell booze there, like the one in Cambridge! Wooo! I'll mostly be blogging about fun finds and simple foods we create from their products.

Let's make some lunch!

Our new thing is making wraps and we're staring to make some really interesting ones.. MmmMmm. Today we're doing a simple chicken salad. 

Canned Chicken  
Tortillas               
Baby Spinach
Shredded Cheese
Mayonnaise and some spices


Mix a couple of good spoonfuls of mayonnaise with the chicken chunks in a bowl, add some salt, garlic powder and pepper to taste. Keep stirring until it's a nice consistency. 



We wanted to make a melt so we threw the tortillas on a cookie sheet tossed some shredded cheese right on top and put it under the broiler for 2 minutes.

The tortilla comes out nice and warm and ready to roll, so in my opinion it's worth the extra step.







Look at it! All gooey.. Mmm.. 













Top the cheese with a couple of scoops of the prepared chicken salad and some crispy baby spinach instead of ho hum lettuce. We used what was leftover from their pre-packaged Baby Spinach Salad. 








Roll up and enjoy with something snazzy like Newton's Folly Granny Smith Draft Cider!
